Is there a way to quickly toggle ViEmu on/off? I just had a coworker sit down with me to go over some code, and she very quickly became confused; I ended up uninstalling for that session.

The quickest thing now is to go to Tools|Options|ViEmu and uncheck "Enable ViEmu". It only applies to text windows opened afterwards, so you'd need to close all windows after toggling it.

Let me echo that request. I do a fair amount of pair programming and no-one else on my team wants anything to do with that bizarre Vim, so an easy way to toggle between the normal VS keybindings would be a plus.
